About the Class

In this class, you will learn:

  • How to bake Pumpkin sourdough from scratch
  • How to bake a three-toned Brioche bun from scratch.
  • How to bake ‘ghost face’ olive fougasse scratch.
  • How to infuse spices with dried fruits.
  • Shaping and folding techniques
  • Sourdough decorative scoring
  • Shaping of pumpkin style bread
  • Making ‘ghost face’ olive fougasse.
  • How to grow and maintain your own starter from scratch
  • Different types of flour and their uses.

Students get to bring home:

  • 1 Pumpkin sourdough (400-420g)
  • 9-inch Three-toned Brioche buns
  • 3 Olive Fougasse (100g)
  • Wholemeal Starter in an air-tight glass jar
  • Bread Lame Dough Score Cutting Tools.
