This course is highly recommended for those who wish to hone their cake frosting and cake decorating skills to another level. Upon completion of the course, students will be equipped with the knowledge and technicalities of working with both buttercream and fresh flowers and its endless possibilities of incorporating it into wedding cakes and even other kinds of customized cakes.

The highlight of this class would be the complex technique of stacking and assembling an ombre 2-tiered cake, which is a new skill that can be implemented across all buttercream cakes. This course is beneficial for students who would like to upgrade and develop their skills in the cakes and pastry industry.

Course Summary

By attending this course, you will learn:

One Day Course (8 hours)

  • Introduction and orientation

  • Introduction to Baking Equipment
    1. How to operate equipment
    2. How to measure out ingredients accurately
    3. Explanation on oven temperatures and settings
  • Hands-on Baking by Participants
    1. Demonstration by instructor on how to bake basic cake layers
    2. Full hands-on baking by participants
    3. Work in pairs to bake 3 layers of cake each (6” layers)
      1. Measuring of ingredients
      2. Mixing of batter and dividing into tins for baking

  • Frosting Component
    1. Swiss Meringue Buttercream Recipe
    2. Demonstration by instructor
    3. Proceed to frost a 3-layered 8” Real Cake (Pre-Made)
    4. Proceed to frost a 3-layered 6” Real Cake
    5. Hands-on frosting experience (For both tiers)
      1. Cake slicing
      2. Cake layering
      3. Crumb coating
      4. Side piping technique
      5. Using bench scraper to achieve straight sides
      6. Smoothing and levelling of buttercream
      7. Finish off with crisp and sharp edges
      8. Seamless Violet Ombre effect on the top and bottom tiers

  • Decorating Component
    1. Demonstration on maintaining the structural integrity of a two-tiered cake
      1. Temperature of cake tiers
      2. Doweling
    2. Stacking techniques and tips
      1. Importance of a levelled cake top
      2. How to handle the top tier
      3. How to remove creases/gaps upon stacking of tiers
    3. How to safely insert fresh flowers into your cake
      1. Treating of fresh flowers before use
    4. Designing tips on creating a cascading effect

  • Summary and conclusion
    1. Certificate presentation
    2. Phototaking
